The firm, which he founded in 1988, specialises in making patties - a snack which consists of pastry filled with ingredients like chicken, lamb, vegetables and Caribbean spices.

Nowadays the company, based in Hockley, makes more than 100,000 of its Island Delight patties a week, and has cornered about 55 per cent of the UK pattie market.

Indeed the food is so popular, that he sells to 60 per cent of Britain's prisons as well.

And it all started with his interest in the food from his homeland.
